Clean Eating: Cajun Jambalaya

Even though it has been extremely hot (like 100) around here lately, seeing how delicious this recipe looked in our Clean Eating magazine just made us want to try it now! The flavors were fantastic! My only problem was the salt. The recipe calls for a few low-sodium items which we couldn't find and had to buy the regular item which while eating, I could see the real reason why it calls for low-sodium. The salt was just a little too much for my taste. So for the next time I think we are just going to try harder to find the low-sodium options or omit the salt all together.

It was a very simple and easy recipe and didn't take long in the kitchen at all. And with using instant rice and cooking everything in the foil it was a snap to cook and clean up. The colors from the vegetables and meat just made it not only taste amazing but it looked just as great.

And guess what..?!? I actually took a picture of our meal.



Here is the recipe:

Ingredients:
1/2 lb raw shrimp, 26/30 size, peeled and deveined, tail on
4 oz boneless, skinless chicken breast, dices into 1 inch pieces
1 all-natural low sodium turkey sausage, sliced
1/2 medium white onion, diced
1 medium green bell pepper, stem and seeds removed and discarded, diced
1 rib celery, diced
1 1/2 medium vine-ripe tomatoes, cored and diced
2 cloves of garlic, minced
1 1/2 tbsp salt free Cajun seasoning
1 cup all natural instant brown rice
1/2 cup low sodium chicken broth
Sea salt and fresh ground pepper to taste
Olive oil cooking spray

Recipe:
ONE: Preheat oven to 400F

TWO: In a large mixing bowl, toss together all ingredients except cooking spray, mixing well until combined.

THREE: Prepare 2 foil pouches. Spray each piece of foil with cooking spray. divide mixture evenly among both pieces of foil and seal.

FOUR: Place pouches on a baking try and slide onto middle rack of preheated oven for 25 minutes or until rice and proteins are fully cooked. To test for doneness, carefully open 1 pouch and taste a few grains of rice from center of the pouch. If, necessary close pouch and return to oven for 5 more minutes.

FIVE: Carefully open pouch and pour mixture into a large serving bowl: serve immediately.
